Cables & fibres are the most commonly used medias in LANs (set aside
WLANs which are described by IEEE's 802.11 standards).
There are also other medias like free space optics (FSO) that operates with
lasers and various Radio transmission based equipment, but they are often using
either proprietary formats or using encapsulation.
As cables, nowadays, only twisted pair is relevant. Coaxial cable can be
considered as obsolete.
For fibres in LANs mostly Multimode fibres are used. They are cheaper than
Singlemode fibres, which have a much better performance on lond distances and
are therfore used for WANs (up to global distances).
